Yummy Chile Relleno Casserole
I took a knife skills class the beginning of February, got myself a really good 8” Chef’s knife, and have been cooking up a storm. I made chili relleno casseroles to feed 50 for my daughter-in-law’s baby shower last weekend (pictured here as I took them out of the oven). I wish you could have smelled my kitchen then! I got so many requests for the simple recipe that I decided to share it. Perfect comfort food for a cold day.
